  11. Brian 5 months ago

It was great seeing everyone! Thanks again to Annie (+2500 points), Brenda (+2500 points), Kim, and Sara (+1000 points) for doing an outstanding job with the decorations, the door prizes, and the room setup. The party somehow gets better every year. And thanks everyone for chipping in for the gift cards – I was really shocked! You really love me! 🙂 Hope to see you at the Tacky Lights walk next Saturday…if not, Merry Christmas!

Some of you asked for the recipe for the red lentil soup.
    Here you go ..enjoy

    1 lb of red lentils
    1 large chopped onion
    7 cups water
    4 tbsp olive oil
    1 tbsp cumin
    1 tbsp black pepper
1 tbsp salt or to taste
    1tsp cayene pepper
1 large bunch of cilantro, chopped
    4 cloves of garlic, chopped
    1/3 cup lemon

Rinse lentils in a colander, making sure to remove and sand of small stones.
In a large soup pot, boil lentils in salted water, until tender.
In the mean time, in a large skillet sauté cilantro, onion, and garlic in olive oil. Add to lentils.
Add lemon and salt to taste and let simmer for about 20 minutes.

Just want to apologize for not being able to make or changing my RVSP. Got a nasty bug, thought of this once or twice in between shots of Nyquil and sofa naps but ultimately forgot….no excuse, but regret missing it, glad y’all had a good time. Merry Christmas to all and to all a good night
